Reprocessing a Conversation Should Update Its Title and Emoji

Problem:
When you reprocess a conversation, the title and emoji doesn't update. 

Impact:
You end up with inaccurate titles even after reprocessing. It makes organization harder and makes reprocessing feel pointless if the data doesn't actually refresh.

Request:
When a conversation is reprocessed, regenerate the title based on the updated transcripts or speaker assignments.
